Moodle, in one sentence, is a Learning Management System (LMS) which means a website where you can share course information with students and then manage and track their activity and progress.
A bit more in depth, Moodle is a website which is password-protected so only you and your staff and students etc, have access to it. Inside of this website you can access course information that people shared on Moodle. Here is a view a student would see of courses:

You can upload students lists, or students can register themselves. You can then view and edit student lists like this:
